Oodles of Squash Noodles

I’ve written about this before, but I heard that my instructions were less than great.   So new and improved instructions.  

Spaghetti Squash – Cut squash is half and scrape out the seeds and pulp. Bake spaghetti squash for about 35 minutes at 375 (depends on the size of the squash and personal tastes – 35-45 minutes) Be careful not to over cook otherwise you will loose the “noodles” and will just have squash – run fork through squash to make noodles after cooking. Currently $1.79/lb upcountry, but cooking one squash lasts for many meals for me.

Tomato Sauce – I use whole foods tomato basil sauce because they don’t add sugar to it and it’s good.   Plan on spending some time in the pasta isle – most sauces add sugar.

Ground Beef – Maui Cattle Company ground beef with onions.   Yes – the Maui Cattle Company products is more expensive – but its worth it to me.   The cattle are island-grazed and forage-fed, no growth hormones, antibiotics or artificial ingredients, vegetarian diet of tropical grasses, and are born and raised on Maui, never leaving Maui soil and are traceable back to the farm.   More info here: Maui Cattle Company.  The prices on Maui Cattle Company products vary widely across the island, but I’ve consistently found the best prices at Pukalani Superette. 

 All the ingredients keeps in the fridge really well and heats up in the microwave with 2 x 90 seconds with a stir in between.   Super simple and yummy.
